The best thing to do is to use a distro which welcomes new users, but has the security and foundation to which servers are built on.
For this I suggest openSUSE. openSUSE is sponsored by Novell (their paid product be SUSE enterprise Linux).
openSUSE is free and offers a wide rage of desktop environments. OpenSUSE has a wonderfully designed control panel which allows you to gain quick access to the enterprise level server packages such as Apache and samba. In addition, openSUSE is the only distribution to have a working GUI for app armor, a policy manager that adds an additional level of security to your linux installation.
openSUSE has great documentation and a wonderful community. In my opinion, if you wish to learn linux for the enterprise environment, the best choice would be openSUSE (closely followed by CentOS, a free version of Red Hat).
