Which one is the most used linux distribution for web hosting and network administration?

I’d like to suggest FreeBSD (google it)

Yahoo uses it and hotmail used it before it was purchased by microsoft.

(note: this is not a linux distro, but I highly recommend it.)

I’ve seen CentOS (which is a clone of Red Hat) used a lot.

Most of the companies I consult for use RHEL or a derivative of RHEL, then again most companies hire me because of my RHEL/CentOS background so the results are biased.

Depends on what kind of web hosting. If a large commercial enterprise, stick with the mainstream, commercially supported versions.
For home use, I use Ubuntu 8.04 LTS, as it is supported with patches for 3 years.
This site has many howtos, to set up almost any Linux as a server. I used the Ubuntu version (linked):
