You can manage your site without cpanel but it’s tough to do because you will have to do everything manually. If you have no idea to manually create databases, create email accounts etc, you should def get cPanel with your VPS. Why don’t you just start with shared web hosting, see where your site goes and if you start seeing traffic and income, you can move to VPS. Keep in mind, Unlimited doesn’t mean everything is unlimited. They have limits. I use ChimeHost http://www.chimehost.com and my host has tons of limits when it comes of type of content, size of content etc.
